Executive Chef
Chef Cameron is right at home in the kitchen. A graduate of Western Culinary Institute and world-renowned Le Cordon Bleu training, Chef Cameron dazzles our guests with his creative cooking and spa cuisine presentations. He manages all food operations including menu selection, seasonal rotations, budget, and collaborates with The Resort's Registered Dietitian to ensure guests are getting healthy, balanced meals.
Chef Cameron has an impressive background, working for a number of high-end culinary celebrities in stylish Las Vegas restaurants. For three years, he worked for Wolfgang Puck, followed by Master Chef Gustav Mauler, one of only sixty-four certified master chefs in the world. Cameron also spent time in the kitchen with acclaimed chefs Michael Mina and Mark LoRusso, and worked at Treasure Island, a high volume restaurant that served 4,000 people daily.
When he's not slicing, dicing, or chopping, look for Cameron pitching a camping tent or serving it up on the racquetball court. Chef's long-term goal is to operate multiple locations, continuing to offer his signature casual elegance, low fat, healthy meals.
Emily Fonnesbeck
Registered Dietitian
The Resort is very fortunate to have Emily. As a Registered Dietitian since 2004, Emily's knowledge on food, nutrition, and healthy living is essential in making our program a success. In her weekly nutrition lectures, Emily educates guests with skills and confidence to make healthy food choices. Lecture topics include portion sizes, intuitive eating, balanced meals, eating out, and grocery shopping.
In addition to lecture host, Emily also provides individual consultations for tailored meal plans and goals. Emily received her Bachelor's in Dietetics from Brigham Young University. She is registered with American Dietetic Association (ADA) and certified for Adult Weight Management through the Commission of Dietetic Registration. Emily has contributed to various print and internet magazines, including The Resort's blog and newsletter. She is one of the most goal-orientated persons you will find, and prides herself on having outstanding organization and time management skills. With the commitment from a guest to meet Emily half-way, she is easily motivated to make an impact on a person's health and wellness, and self-confidence, and is dedicated to being a well-informed dietitians.
Growing up in Utah, Emily naturally enjoys the outdoors, most especially bike riding and hiking with her husband and their young son. She is a runner, practices yoga regularly, and appreciates quiet time with a good book. Her true passion? Nutrition, of course! You could easily find her in the kitchen cooking. She loves seeing fresh, wholesome and healthy ingredients transformed into meals that will nourish someone from the inside out. Emily's enthusiasm for healthy living is easily felt, heard, and learned each week, and guests have come to rely on her expertise to help get them to a healthy lifestyle.
Kwinten M. Kemp
Licensed Professional Counselor
Kwinten lends a vital piece to making The Resort's program a success. He holds a Masters Degree in Mental Health Counseling, and is a student of highly skilled success coaches including Steven Covey, Jack Canfield, and T. Harv Eker.
For over a decade, Kwinten has been in human service positions, and since 2003, has specialized in helping people overcome emotional eating, body image problems, eating disorders, and guiding people into training their minds for health and fitness. He is qualified in working through relationships, emotional, substance abuse, or psychological struggles people face along their course of becoming fit. Kwinten provides weekly interactive lectures designed to teach guests how to break through barriers in achieving a lifestyle of fitness. Kwinten is available for one-on-one life coaching during a guests stay at The Resort. He is the Program Director for "TurningLeaf Wellness Center" in St. George and is well versed in individual and family sessions, group therapy, as well as phone and web based counseling. Kwinten and his wife, Gina, have developed "The Body Appreciation" program, a plan for people to develop self esteem, find a healthy body weight, and achieve personal fitness and wellness goals.
Kwinten embraces the four seasons offered in Utah, enjoying snowboarding in northern Utah and hiking and biking in the southern part of the state. He is an advocate of what he teaches, finding fulfillment in reading and writing wellness, self-help, and thought provoking material. Some of his favorite books include "The Anatomy of Peace" and "Seven Habits of Highly Effective People." Kwinten is the author of "Breaking Through Barriers to Weight Loss" and is currently in the middle of writing three other books.

Jennifer Morton
Life Coach
Jen is instrumental at The Resort and holds several positions ensuring guests get the best experience possible. As a member to our Wellness Team, Jen provides coaching and strategy skills to help guests succeed when they return home. She also holds a bi-weekly lecture series teaching how to establish effective healthy lifestyle goals and build action-oriented project plans around them. As a member of our Guest Services Team, Jen welcomes guests upon their arrival and introduces them to our 4 point philosophy of fitness, nutrition, education and relaxation.
Prior to becoming The Resort's Life Strategies Coach, Jen spent twelve years a successful coach and consultant for companies focusing on Customer Relationship Management, Leadership Development, and Process Improvements. In 2009, she made a drastic career change leaving behind a lucrative and challenging career. In exchange, Jen started her own company, LiFE ETHiC, iNC., to help others find balance in their lives through Life Coaching.
As a former guest of The Resort, Jen continues to be motivated by both the trainers and the guests and thrives on the success of others. As a Life Coach, Jen too looks for inspiration and finds her triathlon coach to be her biggest role model. She keeps an active lifestyle by triathlon training, rock climbing, and often substitutes as a hiking guide. Jen is a committee member for the Attention Deficit Disorder Association and has recently joined forces with a Substance Abuse Program in St. George, Utah.
