Cameron Payne
Executive Chef


ChefChef Cameron is right at home in the kitchen.  A graduate of Western Culinary Institute and world-renowned Le Cordon Bleu training, Chef Cameron dazzles our guests with his creative cooking and spa cuisine presentations.  He manages all food operations including menu selection, seasonal rotations, budget, and collaborates with The Resort's Registered Dietitian to ensure guests are getting healthy, balanced meals.

Chef Cameron has an impressive background, working for a number of high-end culinary celebrities in stylish Las Vegas restaurants.  For three years, he worked for Wolfgang Puck, followed by Master Chef Gustav Mauler, one of only sixty-four certified master chefs in the world.  Cameron also spent time in the kitchen with acclaimed chefs Michael Mina and Mark LoRusso, and worked at Treasure Island, a high volume restaurant that served 4,000 people daily.

When he's not slicing, dicing, or chopping, look for Cameron pitching a camping tent or serving it up on the racquetball court.  Chef's long-term goal is to operate multiple locations, continuing to offer his signature casual elegance, low fat, healthy meals.

Emily Fonnesbeck
Registered Dietitian


EmilyThe Resort is very fortunate to have Emily.  As a Registered Dietitian since 2004, Emily's knowledge on food, nutrition, and healthy living is essential in making our program a success.  In her weekly nutrition lectures, Emily educates guests with skills and confidence to make healthy food choices.  Lecture topics include portion sizes, intuitive eating, balanced meals, eating out, and grocery shopping.

In addition to lecture host, Emily also provides individual consultations for tailored meal plans and goals.  Emily received her Bachelor's in Dietetics from Brigham Young University.  She is registered with American Dietetic Association (ADA) and certified for Adult Weight Management through the Commission of Dietetic Registration.  Emily has contributed to various print and internet magazines, including The Resort's blog and newsletter.  She is one of the most goal-orientated persons you will find, and prides herself on having outstanding organization and time management skills.  With the commitment from a guest to meet Emily half-way, she is easily motivated to make an impact on a person's health and wellness, and self-confidence, and is dedicated to being a well-informed dietitians.

Growing up in Utah, Emily naturally enjoys the outdoors, most especially bike riding and hiking with her husband and their young son.  She is a runner,  practices yoga regularly, and appreciates quiet time with a good book.  Her true passion?  Nutrition, of course!  You could easily find her in the kitchen cooking.  She loves seeing fresh, wholesome and healthy ingredients transformed into meals that will nourish someone from the inside out.  Emily's enthusiasm for healthy living is easily felt, heard, and learned each week, and guests have come to rely on her expertise to help get them to a healthy lifestyle.

Rachel Cope
MPH, RD, CD


Rachel CopeRachel's dedication to health and nutrition makes her an essential member of our wellness team. A registered dietitian since 2005, Rachel provides guests with vital nutrition expertise, conducting a series of workshops that cover such topics as label reading, diabetes management, eating for heart health, feeding a family, and more. Rachel's enthusiasm for empowering people to overcome challenges drives her to inspire and educate guests to exceed their limitations and attain lasting lifestyle goals. Rachel's own journey through weight loss and healthy lifestyle changes ignited her passion for her work in the field of dietetics.

Rachel received her Master's degree in Public Health Nutrition from the University of Minnesota and her Bachelor's in Nutrition from San Diego State University. She is registered with the American Dietetic Association and is a Registered Dietitian in both the U.S. and the U.K. Rachel also holds certificates in both Motivational Interviewing and Behavior Therapy Techniques and is a certified basic food hygiene trainer.

Prior to joining The Resort, Rachel worked for the City of Newport in Wales, U.K., to improve food in the K-12 schools. She also taught a community nutrition course and trained teachers in food hygiene and classroom cooking, as well as conducting child and family healthy eating and exercise programs for a childhood obesity project. Before that, Rachel worked on a national research study aimed at increasing physical activity in middle school aged girls. Rachel's outstanding contributions to the field of dietetics and to a Welsh Assembly Government initiative aimed at improving food in schools, led to her placement on the British Dietetic Association Roll of Honor 2009.

Rachel grew up in St. George, Utah and spent the last ten years traveling and learning about different cultures. She has since lived in Lake Tahoe, Reno, San Diego, The Twin Cities, and Cardiff, Wales. Some of her fondest memories include hiking in Wales and visiting old castles and cathedrals. Rachel enjoys running and is an avid reader - on a rainy day you might find her curled up on a comfy chair with a cup of cocoa and a book in hand. You might also find her at home in the kitchen cooking and experimenting with a variety of ethnic cuisines. She draws inspiration from her sisters and family and has recently taken up oil painting in an effort to nurture her creative side. Rachel's enthusiasm for life is contagious and our guests feel very fortunate to have the opportunity to learn from her.

Krista Bart
Licensed Clinical Social Worker


Krista BartKrista earned her Master of Social Work degree from University of Nevada, Las Vegas and has been working in the mental health and addictions field for the past 14 years. Krista works to create a safe, non-judgmental environment that allows issues to be discussed and healed while skills are developed. She is a solution-focused therapist, utilizing a variety of therapeutic interventions for positive outcomes. Through her holistic approach to treatment, Krista helps individuals identify areas they would like to heal, and identify growth they would like to experience in their lives. As part of the growth and healing process, Krista seeks to help people create balance in their lives as a catalyst for success, growth and healing.

Krista moved to St. George, Utah because she is an outdoor enthusiast. She enjoys most outdoor activities, especially hiking in the red rocks with her dogs. Krista has been intrigued with health and wellness concepts throughout her life. She is interested in the connection between health, wellness, self-confidence and a balanced life. She enjoys cooking and eating excellent food, talking with friends, reading, pottery and a good laugh.


Jennifer Morton

Life Coach

Jennifer MortonJen is instrumental at The Resort and holds several positions ensuring guests get the best experience possible.  As a member to our Wellness Team, Jen provides coaching and strategy skills to help guests succeed when they return home.  She also holds a bi-weekly lecture series teaching how to establish effective healthy lifestyle goals and build action-oriented project plans around them.  As a member of our Guest Services Team, Jen welcomes guests upon their arrival and introduces them to our 4 point philosophy of fitness, nutrition, education and relaxation.

Prior to becoming The Resort's Life Strategies Coach, Jen spent twelve years a successful coach and consultant for companies focusing on Customer Relationship Management, Leadership Development, and Process Improvements.  In 2009, she made a drastic career change leaving behind a lucrative and challenging career. In exchange, Jen started her own company, LiFE ETHiC, iNC., to help others find balance in their lives through Life Coaching.

 As a former guest of The Resort, Jen continues to be motivated by both the trainers and the guests and thrives on the success of others.   As a Life Coach, Jen too looks for inspiration and finds her triathlon coach to be her biggest role model.  She keeps an active lifestyle by triathlon training, rock climbing, and often substitutes as a hiking guide.  Jen is a committee member for the Attention Deficit Disorder Association and has recently joined forces with a Substance Abuse Program in St. George, Utah.
